1/2 c. egg subsitute
crumbled feta cheese
roma tomatoes, cut up, I took the seeds out
2 tbsp. red onion
I used blk. peper only but U can also use garlic powder, basil, etc..
Spray pan w/ nonstick spray..add onion and tomatoes, and cook, stirring occasionally, til onion brwned about 2 min..
Add the egg subsitute and scramble for 2-3 min, til fully cooked. plate and top w/ crumbled feta..season to taste..The feta cheese makes this dish so don't be shy with it!! I had this with some bacon on the side...
**Cannoli Stuffed French Toast Nuggets**
If u only try 1 recipe try this one!!!
1/4 c. egg subsitute
1/4 tsp. cinnamon
1 tsp. vanilla extract, divided
3 tbsp. fat-free ricotta cheese
2 tsp. mini semi-sweet chocolate chips
1 pkg or 2 (your preferance) Splenda
1 hot dog bun
2 tsp. buttery spread
Sugar-free syrup
(opt.powdered sugar for dusting)
Mix egg subsitute, cinnamon, and 1/2 tsp. vainilla extract in a sm. bowl..
In a seperate bowl, combine ricotta cheese, choco chips, remaining 1/2 tsp. vanilla extract, splenda, and mix well.
Split hot dog bun open(DO not seperate two halve)(Usually the cheapest brands will break apart) Spoon the ricotta mixture onto bottom half..Gently press the top half down over filling..carefully slice into 4 nuggets. Bring a skillet sprayed w/ spray to med-high heat. Add butter and allow to coat bottom of the skillet. meanwhile coat each nugget with egg mixture(on all sides) Once the butter is melted in the skillet, place nuggets in the pan and cook 3-4 min. flipping til brown on all sides..Serve w/ syrup or sprinkle w/ powdered sugar....YUMMMMMM

Pumpkin Cheese Cake French Toast bites
1/4 c. liquid egg subsitute
1tsp. vanilla extract, divided
1/2 tsp. cinnamon, divided
1 pkg(packet)Splenda
1 tbsp. canned pure pumpkin
2 Tbsp. Cream cheese, room temp.
1/4 tsp. pumkin pie spice
1 light hot dog bun(I use Sunbeam wheat Hot dog buns)(only 17 grams per bun)
2 tsp light butter or butter spread
Reddi-whip or cool whip
Sugar-free syrup
Combine the egg subsitute, 1/2 tsp. vanilla extract, 1/4 tsp. cinnamon, and half of the sweetener in a sm. bowl. mix well and set aside.
In a seperate bowl, combine the pumpkin, cream cheese, pumpkin pie spice, remaining 1/4 tsp. vanilla, remaining 1/4 tsp. cinnamon, and remaining sweetener. set aside. Split hot dog bun open lengthwise, WITHOUT seperating the two halves. Spoon cream-cheese/pumpkin mixture onto the bottom half of the bun..Gently press the top half down over the filling.carefully slice into four pieces(bites)
Bring a skillet sprayed w/ nonstick spray to med-high heat. Add butter and allow to coat the bottom of the skillet.meanwhile, coat each bite w/ egg mixture on all sides(U won't need to use all the egg mixture)
